Crunchy crackers by Rens Kroes

Don’t get me wrong: I like my guilty pleasures once in a while. But usually I eat quite healthy and at least as pure as possible. A few years ago I changed my way of eating after reading more about the effects of food on your body and health. I tried what worked best for me; headaches disappeared and I got a lot more energy!

Rens Kroes is the it-girl when it comes to healthy but delicious recipes. In her beautiful cookbook “Power Food” she presents her favourite recipes for a happy and healthy lifestyle. From a nutritious breakfast full of vitamins to a rich chocolate cake; it’s all in the book! I’ve made several recipes from it already, but my favourite must be the crunchy crackers. Easy to make, perfect alternative for bread and great taste! Compared to the original recipe I left out the puffed amaranth because I couldn’t find it, and I also added less salt.

Crunchy crackers

Makes 10-12 pieces

Ingredients
    • 3 full tbsp. of pumpkin seeds
    • 3 full  tbsp. of sunflower seeds
    • 3 full tbsp. of flax seeds
    • 7 tbsp. of white sesame seeds
    • 3 full tbsp. of oats
    • 80 gr of rye flour
    • 90 gr of buckwheat flour
    • 1 tsp. of organic baking powder
    • 1 tsp. of salt
    • 2 tbsp. of melted coconut oil
    • 125 ml of water
Instructions
  1. Preheat the oven to 170 degrees
  2. Mix all ingredients in a large bowl and slowly add the water while you keep stirring (the dough should get a bit sticky, you might need a bit more or a bit less water)
  3. Line a baking tray with greaseproof paper and spread the dough on the paper. Place another piece of paper on top of the dough and roll flat with a rolling pin (approx. 1/2 cm thick)
  4. Remove the top paper and cut the dough into small rectangles
  5. Optionally you can sprinkle some extra seeds on top of the crackers
  6. Bake the crackers for 45 minutes until crunchy
